spoon with me: mexican bowls

mexican food is good anytime but, i find myself eating it more in the summer. this month on "spoon with me" i will show you a great, quick and easy dish with lots of possibilities.

let's get started. first on the need to know list is anything is good! you can use all fresh versions of the ingredients or use whatever you have on hand. you can always substitute and add anything as well.

need:

rice- brown or white

beans-any kind

corn

salsa

cheese

avocado

sour cream or greek yogurt

prepare:

cook rice, beans and corn your way

and then salt and pepper.

divide mixture into your serving bowls

sprinkle cheese on top

then add salsa

avocado

dollop of sour cream or greek yogurt

more ideas:

you can add diced peppers, fresh cilantro, black olives, beef, chicken or shrimp

drink ideas:

lemon or lime water

citrus flavored sodas or spritzers

iced coffee

serve with ideas:

chips and salsa, guacamole

corn muffins, a simple salad

dessert ideas: dark chocolate with chilies, fresh watermelon, a warmed cinnamon doughnut with a scoop of vanilla bean ice cream on top

lights some candles and put on some flamenco guitar music and enjoy! ole!
